Metabolic vitamin B12 status on a mostly raw vegan diet with follow-up using tablets, nutritional yeast, or probiotic supplements.Ann Nutr Metab. 2000;44(5-6):229-34.
In summary:

1) True cobalamin (precursor to B12) is not found in any significant quantity in plant foods (this has been researched and documented). It's true that plants contain all the amino acids we need, and it is helpful to think of amino acids as building blocks used to make more complex substances. However, our bodies need blueprints and only know how to combine amino acids in certain ways using specific enzymes. There is no evidence that our bodies know how to take the necessary amino acids and make B12 out of it. That's like saying that I could give you all the metal you need to make the Golden Gate bridge (without any workers or tools or blueprints) and expect you to build it.

2) One study reported that B12 can be synthesized by bacteria who live in the small intestine (this bacteria was isolated from a few volunteers in Southern India). This has been the basis of claims that raw foodists do not need B12 supplementation. Also, dehydrated cereal grasses were found in one study to contain a very small amount of B12.

3) In contrast, every single other study of vegetarian and especially vegan populations has shown that a substantial proportion of the tested group had B12 deficiency or high MMA (related biological marker). There are about 11 of these studies, listed in the references to the above article.

4) In the study cited above, it was hypothesized (based on #2 and #3) that raw foodists consuming a diet based on carrot juice, fruits and veggies, and dehydrated barley grass juice might be able to avoid B12 deficiency. This hypothesis was incorrect. Like previous studies, they found about 50% of their subjects developed B12 deficiency.

On the side of raw food, not everyone in these studies developed B12 deficiency and it's not clear why some people do while others don't. However, most of these studies are short term and one longitudinal study concluded that all vegans studies eventually developed B12 deficiency. In my personal opinion, a long-term commitment to a raw food diet should be coupled with B12 supplementation - it's not a certainty that you will develop B12 deficiency, but it's a gamble you are taking. Also, the signs of B12 deficiency take a very long time to develop and signs are quite subtle at first.

Talk to you tomorrow!
Best
Valerie in the Raw Food Diet World
www.MyPrivateCoach.com

dinner: aurgula salad + Micro greens,

<link rel='alternate' type='text/html' href='http://myprivatecoach.blogspot.com/2004/11/day-2728-b12-mystery-is-still-unsolved.html' title='Day 27/28 - (check her page at: http://www.myprivatecoach.com/myPrivateCoach/coaches/kaleah_laroche.php)

Yesterday's food:

Lunch: not raw though healthy: 2 small slices of home-made egg less veggie quiche

Snack: raw Italian crackers (amazingly good!!!), a slice of raw Essene bread with raw almond butter, a few almonds

Dinner (at a restaurant) : 1 apple, a green salad and a fruit salad

Today:

Breakfast: an organic avocado spread on 1 slice of Essene bread and an amazing Raw Smoothie which Kaleah created yesterday! Give it a try!

Jogging for 30 minutes (75% uphill and 25% downhill)

Lunch: 1 cup of sprouted buckwheat with walnut/cilantro pesto (and 4 black olives), a slice of Essene bread with pesto, 1 slice of Essene bread with raw almond butter, 4 almonds

Yoga 30 minutes

Now a funny question: am I eating too much?
Yesterday I was talking to my publicist who told me that only me could eat so much and stay thin! Well, I went back to my blog and tried to understand how somebody could have the feeling I ate a lot.
I found it! It is because I am getting a lot of different types of food in one day. But the quantities are very small.
For instance, a slice of Essene bread (raw bread made with sprouted wheat) weighs less than 10 grams!
When I eat a few almonds, it usually amounts to 4.
If I eat olives, I don’t exceed 5.
In the smoothie, I put 2 bananas and 3 oranges and that served 4 of us.
1 cup of sprouted buckwheat has less than 100 calories.

So yes, I am getting a lot of variety but not that many calories.

Give it a try yourself. Last week I started at 48.5 kilos and 18.5% body fat....then for some reasons, 3 days later, I was 3 pounds heavier and a body fat of 20%.....totally un-understandable!

Well, today, hu.....this morning, I weighed myself:

and GREAT NEWS!! I am back to where I was :o) More exctaly: 48.6 kg and 19% body fat which is ok....This never stays stable as the percentage varies if you drink more (or less).

Yesterday was 75% raw with 3 meals out of 4 100% raw. My afternoon snack was a raw bar (very yummy), a banana and a handful of almonds.

Dinner : not raw: whole wheat bread (1 slice) with home-made paprika hummus and 2 slices smoked salmon.

I slept like a Queen. Very interesting, the two previous nights, I woke up at midnight never to go back to sleep again (well until the following night :o)..maybe because I went back to my regular food habits....we shall see if this sleeping well pattern repeats itself when I eat 75% raw.

Breakfast this morning:
juiced carrots and oranges...then 45 minutes later....
Warm tea with raw honey + 3 baby slices of raw millet bread and 1 avocado + a pinch of raw salt.

Now I am off to some yoga to balance the physical and spiritual sides of my self.

Enjoy your day! How to Sprout Grains

Sprouted grains are amazingly good for you!

The nutritional content of sprouted grains is as follows:

Vitamins A, B, C, D, E and KCalcium, Carbohydrates, Chlorophyll, Iron, Magnesium, Niacin, Pantothenic Acid, Phosphorus, Potassium, ZincAll Amino AcidsTrace ElementsProtein: up to 35%!!!

No need to buy a fancy sprouter...as long as your grains are rinsed regularly, can breathe and are not sitting in a puddle of water (which can kill the crop) you will get (within 2 to 6 days) great, healthy and tasty grains.

Once sprouted, you can keep your grains in the fridge (well covered) for up to 4 weeks.

I use a simple coleander to sprout the lentils and soy beans I have eaten so far..and it works great! I rinse them mornings and evenings, make sure there is no water sitting at the bottom of the coleander and.....after 2 days, I start seeing the baby sprouts....after 3/4 days I can eat them....and if you have guests, prepare a fancy salad (salad mix, grated carrots, sun dried tomatoes, black olives) on a plate which you can sprinkle with sprouted grains......looks like in a restaurant.

Enjoy!
Valerie
www.MyPrivateCoach.com

Day 8 - You don't want to know...

Hello

Not that much raw food today...I expect to be back on track tomorrow....I hope that this non-raw day did not ruin my great looking skin!

Tomorrow is the weekly weigh-in...will share with you the results!

Have a great week wherever you are in the world!

Warmest regards from your raw food diet diva
Valerie
www.MyPrivateCoach.com

Day 7 - Raw Food Diet = GREAT Looking Skin !

Wow and re-wow!

I am very very happy! Great!
They also had lots of supplies so I bought some dried fruits, raw bars and crackers and some spirulina (need to make some research on this one, seems to be very healthy).

I have felt exhausted all day with light headaches..Must be the detox kicking in!
And for a lady who is famous for having an iron-flat stomach, I am all swollen....Must be some detox impact too!

I have decided, based on Kaleah's advice, to go to a 50% raw food diet for now so that not to "traumatize" my body too much! Raw Squash Soup!

I use a yellow squash such as butternut and let it sit at room temperature after purchasing. I peel the squash, seed it and cut it into cubes. I warm some pure water on the stove, careful not to heat it over 110 degrees.

Put the squash into a good vita mix blender or food processor and ad some of the warm water. Blend until smooth. Ad the following ingredients:

1 carrot, washed with the ends cut off
½ small onion, chopped
1 clove of garlic
½ bell pepper chopped

Ad the vegetables and blend into a puree. Season to taste with Nama Shoyu. Celtic sea salt, or Braggs Liquid Aminos, cumin, curry, turmeric, basil, rosemary, sage or whatever seasonings you enjoy. I only slept 2 hours!).

Breakfast: 1 banana + the juice of 3 squeezed oranges + 1 Tbs of honey mixed in the blender with a heaped Tbs of my super green power food.
+ 2 small slices of date bread with honey

I think I am missing variety here.....but my order from EatRaw has not even been shipped yet! and where I am..I can hardly find anything for a raw food diet.....oh well, the good news it that the lentils are sprouting nicely and should be good for tomorrow....I have also put some soy beans in my sprouting process so these should be good on Friday!

Wow! I just weighed myself because I was onthe phone and did not know what else I could do while talking :o) and I gained 3 pounds!!! I cannot believe it! I went from 48.5 kilos to 50 kilos in 3 days! I just cannot believe it! I am either full of water or I am eating too much (and this I cannot understand how it can be!). Kaleah to the rescue please! (check out her page at: http://www.myprivatecoach.com/myPrivateCoach/coaches/kaleah_laroche.php)

et voila!

Yours,
Raw Valerie
www.MyPrivateCoach.com

Day 2 - I slept like a Queen

Howdy!

Well the first day went very well..I was not even hungry at all!
At 4 pm though, I forced myself to eat because I was afraid I would not get enough nutrients, vitamins et al from this diet. So I had some raw ”bread” with raw honey and lots of nuts.
For dinner I had salad mix + half an avocado..did not use salt but dulse instead….contains much less sodium! + a slice of raw bread + raw pesto.
Still have my hot tea…because it is cold here! And after all this is raw hot water so this should be find…..

The lentils are really sprouting now…need to ask my dear Raw Food Diet Coach Kaleah (you can check her page at : http://www.myprivatecoach.com/myPrivateCoach/coaches/kaleah_laroche.php ) when I am supposed to eat them: 3rd day, 4th day…doesn’t matter?

I slept like a Queen….don’t know if it the impact of my first raw food day or pure coincidence..but considering I am insomniac…it was pure pleasure!

Breakfast: 2 squeezed oranges + 1 squeezed grapefruit + 1 banana all mixed in the blender + 1 heaped Tablespoon of my green superfood stuff + 2 slices of raw bread and raw honey…I should survive till lunch :o)

Lunch: salad mix with cashews (raw of course), balsamic vinegar (hmmt this is maybe not allowed? Kaleah!!!??), raw salt, an avocado, raw bread, pesto, more nuts, a teaspoon of honey...and then I have been munching till now on nuts.... and a banana!

I usually have breakouts so I want to see if with this diet my skin becomes like a baby’s skin :o)….will let you know!

I am also losing my hair so hey! If it comes back..I am a converted Raw Foodist!

So far so good…I can even cook and bake cakes for my son (this morning) without wanting to taste a bite….

Have a great day!
Valerie
www.MyPrivateCoach.com

Day 1 - Decision is taken to start today!

Hello my dear friends.......

We have a Raw Food Coach onboard but this is not the reason for my decision....Though her presentation of the Raw Food Diet may have participated in my enlightenment!
After having spent a rainy week end eating too much fatty cheese....so much that I became sick....and after having been badly sick over the past few years, I have spent this sick week end doing some research on the raw food approach.
I am ready to give it a try.
The purpose is NOT TO LOSE weight. The purpose is too feel healthier and more energetic.
I wake up tired, I have a hard time sleeping.....don't feel that good these days!
Just for the record, my weight this morning is 48.5 kilos for 18% body fat (according to the CDC I am technically underfat!)..we shall see if this diet impacts my weight and body fat or not.
I placed an order yesterday on www.eatraw.com to get all I need...and I put some green lentils in a dish with water to make them sprout. I need to ask Kaleah (our Raw Food Diet coach) if this is the proper way!

Will share more tomorrow......

oops...I forgot..I started the day with a hot tea...this I won't give up because I know how good it is for me (especially on a rainy day :o)

Because my order has not arrived from Eat Raw yet, I had the following breakfast: an apple, some sprouted grain whole wheat bun + raw basil/tomato pesto. Because it was chilly this morning, I ate standing above my oven with its door open :o)...and not to lose any minute, I contracted my glutes all the time I stood there!

Ok now the challenge is that I am having a business lunch in a restaurant.....what will I find there???
Well, I am back......Got a blueberry fresh juice + carrots, cucumber, sprouted soy beans and spinach. I was luck..there was a vegan organic bar!
On my way back, bought some raw bread, lots of beans to sprout in my kitchen and raw honey for the sweet tooth :o) and some cool raw nuts...funny! usually with roasted salted cashews, I cannot stop..here after a handful (and a small one) I just stopped naturally.....

Truly yours,
Valerie
